Lemon & Garlic Roast Potatoes
1kg baby potatoes, scrubbed and halved if large
4 tbsp Ola lemon-infused oil
1 bulb garlic, peeled and halved
zest of 1 lemon
Chopped parsley to garnish
Boil potatoes for 5 minutes, drain and return to pan to steam dry.
Heat oil in large roasting tin until smoking hot.
Add potatoes, garlic, lemon zest and season with salt and pepper.
Cook at 200 C/180 C/Gas Mark 6 for approx 40 mins until tender, turning occasionally.
To serve, transfer to serving dish and sprinkle with parsley.
